  • Large Mixing Bowl

  • 1 Brownie Package mix
  • 1 Fudge Icing Mix
  • 1 egg
  • 1/3 cup butter flavored olive oil
  • 1/4 cup Bailey Irish Cream
  • 1/2 cup Butterscotch Chip
  • 1 bag Hershey Pot O Gold Chocolates optional
  • 1 Green Sprinkles
  • 1 pack Cupcake Liners


  • Assemble all baking goodies and preheat oven to 350 degrees. 
  • Basically your are going to prepare the brownie mix as directed on package but use Bailey Irish Cream in place of water, and for a richer flavor use butter Flavored olive oil. 
  • Add in butterscotch chips to mixture just before you place into baking cups. 
  • I use an ice cream scoop to distribute the batter evenly I only got 8 servings from 1 package, so if you need more you will want to double this recipe.  
  • Bake for 26 minutes at 350 degrees, or the directions on the package, I used Betty Crocker Fudge Brownie mix. Allow to cool before icing. 
  • Add fudge Icing and top with a Pot of Gold Chocolate. Add green sprinkles for that festive touch.
