Butternut Noodle Toss

Ingredients

  • 1 package Butternut Squash Noodles
  • 1/2 cup Edamame dried or fresh
  • 1/2 cup cran-cherries
  • 1/4 cup walnuts or peanuts
  • 1 bag Cauliflower pearls
  • 2 Tbls Lime Olive Oil
  • 1/2 Peanut Butter
  • 1/4 Honey
  • 3 Tbls Sriracha
  • 1/2 Lime Fresh (juice)
  • 2 Tbls Garlic
  • 2 Chicken or Turkey Breast Cubes

Instructions

  1. Heat Lime Olive Oil in Wok with Garlic and Chicken

  2.  Add Butternut Noodles, and Cauliflower Pearls saute' for 3-5 minutes

  3. Top with all remaining dry ingredients 

  4. Pour honey, sriracha and peanut butter mixture over vegetables allow to melt and toss
