Assemble Your Ingredients above, this recipe is a hack so while you use a box mix you are not following those directions.
Mix the Jim & Nicks Mix with cut butter pieces. I use my hands just like making biscuits, this method is known as cutting in butter. You can grate the butter into the mix as well, it is you choice as to what you are comfortable with doing.
Add in drained peaches, make sure to let them sit in a strainer for a bit to remove excess juice.
Then add in your half & half to make a dough like mixture.
Scoop the muffin mix into a greased mini muffin tin.
Bake for 15-20 minutes at 400 degrees, 350 if you are at a high elevation. Allow to cool for 5 minutes and turn them out into your bread basket.
