Homemade Pumpkin Spice Bread

Ingredients

  • 2 cups Flour
  • 1 cup Libby's Pumpkin
  • 2 Eggs
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Kosher Salt
  • 1 cup Light Brown Sugar
  • 1 cup Orange Juice
  • 1 tsp Madagascar Vanilla
  • 2 tsp Blood Orange Olive Oil
  • 1 tbsp Pumpkin Pie Spice
  • 1 can spray olive oil
  • 1 cup Glazed Pecan optional

Instructions

  • Preheat oven to 350° F and lightly grease loaf pan with spray olive oil.
  • Sift flour, allspice, baking powder, baking soda and salt into medium bowl.
  • Combine pumpkin, sugar, apple juice, eggs, oil and vanilla extract in large bowl; stir well. Stir in flour mixture just until moistened. Fold in optional pecans.
  • Pour into greased 9 x 5-inch loaf pan.
  • Bake for 65 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes; remove to wire rack to cool completely.
