In the past years I have shared a few fun ideas for celebrating St. Patrick’s Day, with green drink concoctions like my Lucky Leprechaun,  or my delicious Pot O’Gold Caramel Cupcakes. This year I decided it would be fun to show you the full standard Irish feast which is similar to Sunday Roast. We had a Corned Beef Brisket, Roasted Rosmary Potatoes, and White Cheddar Spinach Mac & Cheese. Irish Sunday Roast JENRON DESIGNSThe term Sunday Roast is most commonly associated with Sunday dinners in the UK, but it is also an Irish term as well. The northern Irish Sunday Roast, is normally comprised of roasted pork, ham, beef or chicken, and sides of potatoes that can be mashed or oven roasted. You will also usually see carrots and a green vegetable like beans, brussels sprouts or peas.St. Patricks Feast JENRON DESIGNSThe leftover food from the Sunday Roast was traditionally used to form the base of meals served throughout the week. For example, a roast beef may be chopped up with leftover carrots along with some additional onion and used in the filling for Shepards Pie and topped with leftover mashed potatoes. Irish Rosemary Potatoes in Air Fryer

Equipment

  • Air Fryer
  • Potato Peeler
  • Knife
  • Roasting Sheet (optional way of cooking)

Ingredients

  • 1 lb Potatoes Russet, Yukon, Reds- cleaned, peeled, and diced
  • 1 can Spray Olive Oil
  • 4 sprigs Rosemary Fresh stem removed, & finely diced
  • 1/2 tsp 5 Peppercorn Blend ground
  • 1/2 tsp Seasoned Salt Preferred Penzeys- which already contains onion powder, garlic powder, red pepper flakes and cheyenne mixed in, if your seasoned salt does not have these spice you can add a dash if you like.

Instructions

  • Wash and clean your potatoes, remove peel and dice. You can also cut into strips if your prefer fries, just add 2 minutes to the cooking time.
  • Place potatoes in bowl and coat liberally with the olive oil spray so that seasoning will stick. I find that 3-4 sprays are about right.
  • Remove rosemary from stems and rough dice the herbs.
  • Add all spices and rosemary to potatoes and toss.
  • LIghtly coat Air Fryer with Olive OIl Spray and add potatoes.
  • Bake at 390 degrees for 18 minutes. Make sure to open and toss the potatoes regularly to prevent burning or over browning. This will also give you a nice even crisp to your potatoes. I tried to 3-4 time at intervals of 5-6 minutes apart.

I do want to talk a little bit more about the table decor and how I pulled everything together for all my decor buffs out there. As you can see I keep with the basic green theme which can be seen in the celtic style of plates, and two variations of green tartan plaid napkins. I also think of heavy wool sweaters when I think of Ireland so I went with the charcoal grey placemats which is a nice contrast. Then I decided to give a nod toward the idea of gold coins without overtly doing gold coins.
St. Patrick's Table JENRON DESIGNSHonestly doing the gold coins just seemed a little too obvious to me, and maybe a little bit kidsy. Since Saint Patrick Day tends to be geared a bit more toward adults, I decided to use my existing gold chargers and goldware, which have really gotten a workout this season, since goldware has made such a come back. I mean who knew? I would call out the vendor on it if I could, but this was actually a wedding gift and is over 23 years old at this point, so it is the original goldware from the first time around, sorry guys.
Luck of the Irish Table JENRON DESIGNS However, if you are loving the goldware there are plenty of great ones out there, just keep in mind that if you buy the real stuff it is hand wash only, and while it takes a lot of work, it will last forever. I also played up the gold coin theme by spray painting some silver dollar eucalyptus leaves gold, seen above. Silver Dollar eucalyptus is named for its coin like appearance and the fact it is the size of a silver dollar. As a floral designer, a pro trick we use all the time is spray painting greenrery, especially a metallic shade, this adds visual interest and texture to all arrangements. So honestly this one seemed like a no brainer to me, a coin shaped greenery I can paint gold, for the table, check!Place cards for St. Patricks Day JENRON DESIGNSI also thought it was a fun idea to use a single leaf as a place card. Just for laughs I gave everyone an Irish version of their name, unless their name was already on the Irish spectrum. We also thought it would be fun to have everyone tell an Irish Limerick as well.  Some of those I cannot repeat, but they were all funny just the same. If you are a lover of Irish Cream and chocolate you are going to love these ooey gooey brownies, they are delicious! One last festive tip I have for you, if you want to add a little more of a Saint Patrick’s Day feel with the glittery four leaf clovers and Leprechaun hats like the ones above. Try using them as disposable cupcake holders seen above, or even shrouds for your single serve items like Mac & Cheese cups. It is just enough to add some fun, but you can toss it when you are done, or wear it as a “wee tiny hat while you tell your dirty limericks”, whatever works for you. Happy Saint Patrick’s Day!

  9. St. Patrick’s Day is my favorite holiday. Ive never gone to school or worked on it neither have my children. I long for my normal St. Patrick’s Day traditions…Lovely setting and tradition… as an Irish descendant and wife of an Irish Immigrant we do Sunday roast very often. His mother in Co. Donegal cooks a roast every sunday. Since Corned Beef isnt an Irish dish, we dont often make it for St. Patrick’s Day.

    What a fun table! We really don’t do much for St Patrick’s Day. Maybe we’ll get Shamrock Shakes but that’s about it.

    This all sounds so good! I’d love to try making my own corned beef, that would be so festive. I have a hot mitt I got in Ireland and it has a recipe for Irish Soda bread. I’m glad to have more recipes than just bread now though for a St Patrick’s day feast!
